Beef Stew

The reason why the beef should be sliced across the grain is that it will be more tender.

What Is Okra?

Okra, which is also known as gumbo, lady's fingers, bindi, or bamia, is a member of the mallow family. Grown first in northwest Africa, this vegetable made its way to Brazil in the 1600s and finally reached North America with the slave trade.

This vegetable produces a sticky juice as it cooks, which works as a natural thickener. That is why okra is so popular in stews, gumbos, and soups. It tastes a bit like eggplant and only takes about four minutes to cook.

It is used in meat and vegetable stews is Iran, Egypt, Greece, Yemen, Turkey, Syria, Tunisia, Lebanon, Jordan and Iraq and in some other Mediterranean areas, and used in India and Pakistan too.

Many West Indian recipes call for young okra pods, which are used whole. Okra is enjoyed with soup in Caribbean islands and fish is often served with it. The vegetable is cooked with maize and rice in Haiti and the resulting mixture is used as a meat sauce.

What You Need:

  • 1/4 cup vegetable oil
  • 4 minced cloves garlic
  • 2 lbs beef sirloin or shoulder, thinly sliced across the grain
  • 1 cup stock or water
  • 2 teaspoons thyme
  • 1 cup chopped tomatoes
  • 1 lb sliced okra, stems removed
  • 1 thinly sliced onion
  • Salt and black pepper

How To Make It:

Heat the oil in a skillet over a moderately high heat. Saute the meat until it is cooked through and browned, then season it with salt and pepper and transfer it to a plate. Saute the onions for a few minutes in the skillet, adding more oil if required. Add the garlic and saute for a few more minutes.

Stir in the tomatoes and simmer the mixture for three minutes, then return the meat to the pan and add the stock or water, as well as the salt, pepper and thyme. Turn the heat down to low and simmer gently for twelve minutes. Stir in the okra and simmer for eighteen minutes or until the meat is tender. Add more salt and pepper if required and serve over rice.

As the mixture cooks add the broth, coconut milk and the beans. Cover and continue to cook for the next 8 hours. When completed serve hot over rice.
