Grilled Cauliflower - Easy and Delicious
Delicious as a side dish or an appetizer served with a prepared dip, grilled cauliflower is fast and easy to make using just a few ingredients. This dish goes well with chicken, beef, pork and seafood.
1 head fresh cauliflower
3 tbls olive oil or vegetable oil
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1 tsp Italian seasoning or seasoning mix
Preheat grill to 425 degrees.
Wash cauliflower and remove leaves. Cut off about one inch from the stem. With the cauliflower sitting upright and the stem facing downward, cut vertical slices, 1 1/2 inches thick, keeping the florets attached to the stem. In a large zipper bag combine remaining ingredients, and mix thoroughly. Add cauliflower slices being careful not to break them apart. Marinate in the mixture for 10 minutes. Place slices on the hot grill and cook for ten minutes on each side or until tender using tongs to turn. Serves 4 as a side dish or 6 as an appetizer.
Note: If the cauliflower pieces break apart during preparation, they can still be used if they are large enough to place on the grill. Cauliflower can also be roasted in the oven if a grill is not available.
Other ways to use Grilled Cauliflower:
1. Cut into pieces and serve with dip.
2. Combine cut up cauliflower with other cooked vegetables for a main dish.
3. Add to casseroles and sauces.
4. Combine with cooked rice and seasonings for a pilaf.
5. Add to vegetable soup or broccoli cheese soup.
6. Add to stews, especially goes well in beef stew.
7. Add to omelets.
8. Add to your favorite salad.
