French Stew Recipe - Beef Braised in Beer

This French stew recipe, known as carbonnade, comes from the north of France in a region that is called Flanders. Flanders blends somewhat seamlessly with Belgium to the north, and although there is a political boundary, the cultural and gastronomic boundary is not so evident.

There is a lot of great eating in Flanders, and the cuisine is quite distinct from other regions of France. Flanders is home to one of the most popular of all dishes in France: the steak frites (steak and French fries).

Beef Stew

In this French stew recipe, beef is slowly braised in beer. What beer you use will effect the outcome, and you may want to try the recipe several times to come up with your personal favorite. A good bet is to use a light beer such as a pilsner the first time. Watch out for dark beers, which may add interesting flavor, but risk to turn the stew bitter.

Carbonnade de boeuf

  • 2 pounds stew beef
  • 4 large onions, sliced
  • 2 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 2 tablespoon sugar (raw or light brown)
  • 1 tablespoon wine vinegar
  • 2 tablespoons flour
  • 2 cups of beer
  • bouquet garni (or use 1 teaspoon thyme and two bay leaves)
  • (optional: 4 slices slightly stale French bread spread on both sides with 2 tablespoons French mustard)
  • salt and pepper

Slice the stew beef into pieces about 1 inch by 1 inch. Peel and slice the onions. Peel the garlic.

Heat two tablespoons of olive oil in a Dutch oven or other sturdy pot. Add the sliced beef and brown it on all sides. Sprinkle the meat with salt and pepper. You may have to do two batches depending on how large your pot is. Remove the meat and pour off the juices (reserve these).

Add one more tablespoon of olive oil to the pot, and add the onions. Cook the onions for 15 minutes on low to medium heat, stirring frequently. You want the onions to brown slightly and caramelize a bit.

After 15 minutes, stir in the crushed garlic, sugar, and vinegar and cook for 2 more minutes. Sprinkle the flour on top of the onions and stir to coat thoroughly. Add the meat and juices back to the pot.

Pour the beer on top of the meat, add the bouquet garni (or thyme and bay leaves), and stir everything to mix.

Cover the pot and simmer the stew on low heat for two hours or more. The stew should be just barely bubbling as it cooks. Towards the end of the cooking time season to taste with salt and pepper. Remove the bouquet garni (or bay leaves) before serving.

If you wish you can place slices of mustard slathered French bread on top of the stew about half way through the cooking time. This will melt into the stew and add flavor and texture.

Makes 6 servings. (Leftovers are no problem - this French stew recipe tastes great reheated the next day).

Call me nostalgic, but I can't think of anything to conjure up childhood memories quite like good old fashioned dumplings do. I saw them on a pub menu a few weeks ago and I've been yearning to have them in a rich thick stew ever since.

So at the weekend I gave into my cravings. I made a rich beef stew with lashings of sticky, glossy, gelatinous gravy, plus eight soft, fluffy, white dumplings to mop it all up with. It was the ultimate comfort food, soothing and restorative. Quite frankly, it was heaven in a bowl.

The great thing about dumplings besides adding interest to soups and stews is their subtle ability to stretch a meal further at virtually no extra expense. Added to this, everyone loves them. You can tell this is so just by the way their faces light up at the mention of stew and dumplings.

Luckily for me, my Grandma made the softest, lightest and fluffiest dumplings ever! Her's were little puffballs of pleasure that melted on the tongue. The trick she employed was simply to add a handful of fresh breadcrumbs in to the mix. She always swore it was the finely grated white breadcrumbs that were responsible for making her dumplings so wonderfully light and moreish. Besides this one trick, everything else is pretty much similar to other dumpling recipes.

When it comes to fat, you can use either a light vegetable suet, (it keeps ages in a cool cupboard and doesn't need refrigerating), or frozen, grated butter.

The other choice you need to decide upon is whether to bake or steam the dumplings. But different rules apply depending on the method you choose.

If you're opting for the steaming method and want your dumplings to fluff and puff up to their full potential make sure you cover them with a tight fitting lid and whatever you do, don't remove it during the steaming process. 1) Measure the ingredients - accuracy is important here

2) Don't be heavy handed, work quickly with a light touch

3) Add sufficient water so the dough is soft and elastic, not sticky

4) Leave space between each dumpling allowing them to double in size

5) Cook the dumplings in gently simmering, not rapidly boiling liquid

And Now For The Dumpling Recipe... 8 Dumplings

Makes:

Preparation & Cooking Time: 25 minutes

Effort Level: easy

Shelf Life: eat immediately

Ingredients:75g plain flour

1 tsp baking powder

50g fresh white breadcrumbs

50g Atora light vegetable suet

75ml water approx

¼ tsp salt

Freshly ground black pepper

Equipment:Bowl

Here's What You Do:Tip all the dry ingredients in a bowl including any seasonings and lightly mix together with your finger tips or a fork.

Make a well in the centre of the bowl and pour in the cold water bit by bit. Draw the dry ingredients into the liquid and lightly mix them both together until a soft pliable dough is formed that comes away cleanly from the bowl.

Lightly flour your hands and divide the dough into eight small pieces, then roll into little balls the size of walnuts.

Lower the dough balls into the gently bubbling stew, cover with a tight fitting lid and leave to cook for 15-20 minutes.

Alternatively if you're baking the dumplings, increase the oven temperature to 200°C Gas 6. Arrange the dumplings in the stew then slide the casserole onto the top oven shelf. Bake without a lid for roughly 25 minutes and the dumplings are a deep golden colour.

Additional Flavourings To Try:-2 tsp dried sage

1 tsp English mustard powder

1 tbsp hot creamy horseradish

1 tbsp finely chopped spring onion

1½ tbsp grated parmesan

1½ tbsp caramelised onions

Cover the crock pot and cook the beef casserole for two and a half hours on low. Cook the macaroni and add it to the casserole with the sour cream and mushrooms. Cook on high for fifteen minutes and serve.

Crock pots are very convenient and easy to use. The meal preparation is also quick. The cooking will take long, but you do not need to be constantly involved as there is no risk of burning the food. The temperature is very low, so the meat will not burn.

But the best about a slow cooker is that you can prepare your meal early in the morning or the previous night, then go on about your day, go to work, or drive your kids around, and when you come home late in the afternoon or even early evening, supper will be already cooked for you. It is wonderful, it is like having a kitchen assistant, and you do not need to pay a salary.

I want to share a delicious and healthy recipe with you.

You will need 6 chicken thighs, skin removed. You will then need 1/2 pound of white mushroom, thinly sliced. You will also need 2 medium sweet potatoes and 2 medium potatoes peeled and cubed. You will then need 2 medium carrots, peeled and sliced and 6 large shallots, peeled and halved. You can also use 4 cloves garlic if you wish. YOU will also need 1 cup dry wine, or if you do not like cooking with wine use some white grape juice. To season you can sue 1/2 tsp of dried rosemary and salt and pepper to taste.

Combine all ingredients except the vinegar in the slow cooker. Cover and cook. Cooking time: 5 hours in low or until potatoes are tender. Before serving stir in vinegar.

Dark Meat Chicken Crock Pot Stew

All the advisors on health matters say you should stay away from red meat and stick to chicken or fish. Others say it is OK to eat red meat but only once a week. If you like beef, and I think that except for vegetarians most people deep down do, this is a good way to have it. If you have sworn off, then substitute a similar amount of chicken leg meat, or pork (if you think it's really that pork really is the other white meat. I like to do this recipe in two stages. First you sweat the onions to get the flavors started, then season and brown the beef, to get the flavors the browning creates. I use a cast iron chicken fryer for this step. Once you have browned the beef add water to the skillet making sure you scrape off all the brown bits on the bottom so they get in the crock-pot. Once you have done this you just dump it in the crock-pot along with all the other ingredients and set the timer

Ingredients

Beef Stew

1 1/2 pounds beef stew meat (chunks)
1 stalk celery, cut in 2 inch pieces
1 medium onion, chopped
2 medium carrots, cut in pieces
1 teaspoon thyme
1/2 teaspoon salt
1/8 teaspoon pepper
1 beef bullion cube
1/2 cp all purpose flour
3 tablespoons olive oil
2 cups stock or water

Instructions

1 - Saute the onions in 1 1/2 tbsp olive oil.
2 - Combine the dry spices with flour and dredge the beef pieces in it.
3 - Add to the skillet with the onions and saute for about 5 minutes.
4 - Add the rest of the vegetables and cook 5 minutes more.
5 - Deglaze the skillet with the water or stock.
6 - Add all to the crock pot and cook 3 to 4 hours on high.

Vegetarian Recipe - Oatmeal Mushroom Steak

Vegetarian or not, come this way, this is so nummy. This recipe is vegetarian, so you meat eaters might want this with a beef, pork, or whatever meat steak. This is not a recipe for Vegans though, I have not gotten there yet unless I fill up on vegetables and fruit. Hey! what a concept, vegetables and fruit. One should always remember the basics if one wants to stay healthy right?

Years ago for about nine months I was a vegetarian. I bought a lot of veggie stuff.. veggie hot dogs, veggie patties, unknown what they were supposed to be really , anyway you get the picture right? I wanted to be a vegetarian for the animals. I felt to so guilty and I guess I still do, but I eat meat again and I guess close off that part of me that worries about it. Once in awhile I make this dish just because I love it. The consistency is very meaty actually. Try it, I think you will like it Micky!

Beef Stew

"Oatmeal Mushroom Steak"

1 TBL. vegex (like a bouillon cube)
1/2 cup hot water
1 tsp. sea salt (yes if you are gonna be healthy make it sea salt, smile)
1/2 sage or poultry seasoning
1 onion chopped
3 TBL. Butter (I always use real butter, the flavor cannot be compared)
3 eggs well beaten
1 can cream of mushroom soup
2 soup cans - hot water
1 can mushrooms (I know, I can 'hear' you, canned stuff isn't all that healthy)
2 1/4 Cup uncooked old fashioned oatmeal

Saute the onions in the butter. Combine all except the mushroom soup, 2 cans of hot water and vegex. Mix well. Cover and let it stand for about 45 minutes. Mold the mixture into small meal size patties and fry in hot oil until golden brown. (Gads another unhealthy thing, stop thinking so loud! I can hear you all the way to Hawaii). Pour a little of the soup mixture (all the stuff you did not use to make the patties) in the bottom of a 9x12 baking dish to cover the bottom. Arrange patties on top of mixture and cover the rest with the soup mixture.
Bake at 350 degrees for 1 hour.

Yay, you are almost done. Make a little salad and some fruit for dessert, set a lovely table. Yay!

  • ¼ teaspoon cinnamon
  • 2 cups hot water
  • Toasted slivered almonds

How to Make It

In the bottom of a 4 to 5 quart crockpot you will place a trivet or metal rack.

Prepare an 8 to 10 cup baking dish that you can place in the crockpot as well as remove after cooking by lightly covering it with cooking spray and then set aside until needed.

Remove the crust from the ½ loaf of French bread by cutting it away with a bread knife. Reserve the discarded crust for future use in other recipes or simply throw it away. Cut the remaining bread into cubes of about 1 inch and then set aside until needed.

Using a food processor or blender you will add the evaporated milk, Kahlua, 3 eggs, sugar, powdered instant coffee and cinnamon. Processes until the ingredients are well blended. Add the French bread cubes and then stir to blend.

Pour this mixture into the prepared baking dish and then cover with aluminum foil while making sure to secure the edges.

Add the hot water to the bottom of the crockpot. Place the baking dish into the crockpot on top of the trivet or metal rack. Cover with lid and then cook on high for about 2 to 2 ½ hours or until you can insert a knife into the pudding and it comes out clean.

After cooking you can sprinkle on the toasted slivered almonds and then serve warm or cold.

1. 16 Bean Soup

Ingredients:

- 1 package 16 Bean Soup
- 3 bay leaves
- 1 tablespoon crushed oregano
- 2 cans no-fat chicken stock
- Additional water to cover
- 3 stalks celery chopped
- 3 carrots diced
- 1 large onion chopped
- 3 cloves garlic sliced
- 1 pound turkey Italian sausage sliced
- 2 cans stewed (or diced) tomatoes

Directions:

- Combine first 5 ingredients (liquid should cover mixture by 1"-2") in Crock Pot Cook on high for 2hours.
- Add remaining ingredients and shift cooker to low and cook for additional 3 hours

- For more zing, add cayenne or crushed red pepper when adding second set of ingredients.

Serve as complete meal or over rice.

2. All Day Crockpot Delight

Ingredients:

- 2-3 lbs. boneless chuck, cut into 1 inch cubes
- 1/2 c. flour
- 1/4 c. butter
- 1 onion, sliced
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 clove garlic, minced
- 2 c. beer
- 1/4 c. flour

Directions:

- Coat beef cubes with the 1/2 cup flour.
- Brown in melted butter.
- Drain off excess fat. In crock pot, combine browned meat with onion, salt, pepper, garlic and beer.
- Cover and cook on low 5-7 hours (all day) until meat is tender.
- Turn control to high.
- Dissolve remaining 1/4 cup flour in small amount of water.
- Stir into meat mixture, cook on high 30-40 minutes.
- Serve with rice and salad.

3. All Day Macaroni and Cheese

Ingredients:

- 8 ounces elbow macaroni, cooked and drained
- 4 cups (16 ounces) shredded sharp Chedder Cheese
- 1 can (12 ounces) evaporated milk
- 1 1 /2 cups milk
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Directions:

- Place the cooked macaroni in crockpot that has been sprayed with nonstick cooking spray.
- Add the remaining ingredients, all except 1 cup of the cheese, mix well.
- Sprinkle with the remaining 1 cup of cheese and then cover and cook on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges.
- Do not remove the cover or stir until it has finished cooking.

4. Apple Brown Betty

Ingredients:

- 3 lbs. cooking apples
- 10 slices of bread, cubed (about 4 cups)
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. salt
- 3/4 c. brown sugar
- 1/2 c. butter or margarine, melted

Directions:

- Wash apples, peel, core, cut into eighths; place in bottom on crock.
- Combine bread cubes, cinnamon, nutmeg, salt, sugar, butter; toss together.
- Place on top of apples in crock. Cover.
- Place crock into outer shell.
- Cook on low setting 2 to 4 hours.

Makes 6 to 8 servings.

1 cup buttermilk

1/4 cup honey

1/3 cup egg whites

2 tbs. fat free egg substitute

Instructions

Sift flour, baking powder, and salt.

Add cornmeal and stir until blended.

Add remaining ingredients and stir until just mixed.

Pour into 9 inch cast iron skillet prepared with cooking spray.

Bake at 350 degrees for approximately 30 minutes or until golden brown.

Quick Tips 

Spray crockpot with cooking spray for easier cleanup.

This meal is very filling but if you aren't quite satisfied you can add a garden salad.

What You Need

  • 1 or 2 rabbits
  • 1 cup sour cream
  • 1 cup cream of mushroom soup
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 onion, finely chopped
  • Salt and pepper to taste

How to Make It

Cut up the rabbits and season with salt and pepper.

Mix the sour cream, mushroom soup and Worcestershire sauce and add it to the crock pot. Place the meat inside and add in the chopped onions.

Cook on Low for 8 hours.

Serve with rice or mashed potatoes.

How to Make Homemade Dog Food

As animal lovers we want nothing more than to make our dog's life as happy and long as possible. We buy him toys to play with, we make sure that he is warm in the winter and cool in the summer, and we feed him a high quality food. The only problem is that many of the 'quality foods' that are sold in pet shops and supermarkets are not exactly what you would consider quality at all.

The fact is that some contain products that most of us would prefer our pets not eat. With that being said it's not surprising that there is a growing trend for dog owners to make their own homemade dog food. This is one way to insure that your dog is getting a quality food and you know exactly what it is made of.

Beef Stew

If the thought of creating your own dog food sounds intimidating, relax - it can be as easy as you want to make it. Here's a quick and nutritious dog meal that my dogs love. I begin with instant oats, instant rice, and peanut butter.

In reality I don't measure at all, but for the sake of this article I will say that I use about 1 cup of oats, ½ cup of rice and about 1 cup of peanut butter. I then add enough water to cook the oats and rice. The next step is simply microwaving the mix for 2 - 3 minutes. Then I add a large, store bought can of beef stew. My dogs love this mix and it's quick and easy to whip up. I add the beef stew after I have micro-waved so the mixture will be warm but not hot.

This is a healthy and nutritious meal because it provides plenty of protein along with lots of grains and vegetables. But even though this recipe works great for my dogs, you should check with your veterinarian before using it or any homemade recipe. The reason is that many dogs have food related allergies and that means the recipe would need to be modified to meet your dog's needs.

Although my method of creating homemade dog food is quick and easy, some people prefer to cook homemade mixtures more slowly in crock pots or Dutch ovens. This of course means they are preparing large quantities that can be separated out for future single uses. This method allows for immediate future feedings then, as all you have to do is warm the prepared meal before serving.

A sample recipe of that sort follows:

Start with a pound of chicken or turkey. Add 6 cups of water and 2 cups of rice (brown rice is preferable). Mix in 8 ounces of frozen mix of broccoli, cauliflower and carrots. Season with 1 teaspoon of dried Rosemary. Cooking time in a Dutch oven will be approximately 25 - 30 minutes, in a crock pot it will be approximately 2 - 3 hours.

When finished cooking let cool and separate into single servings. These can be frozen if desired. When feeding time arrives, simply remove dish from refrigerator or freezer, warm in microwave, and serve.

Ingredients You Will Need:

2 tablespoons extra virgin olive oil

1 pound beef stew meat, cubed

1 cup diced red onion

1 cup chopped carrots

½ cup diced celery

1 10-ounce can condensed tomato soup

3 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon minced garlic

½ teaspoon ground black pepper

½ teaspoon cornstarch

Place oil in a large skillet, and turn heat to medium. When oil is hot, add cubed beef to skillet. Brown beef for 3 minutes. Add onions to skillet, and cook beef and onions for 3 minutes. Make sure beef is cooked. Drain half of the fat out of the pan, and discard. Pour browned beef, onions and remaining drippings in a large crockpot, at least 3 quarts size.

Add carrots and celery to the crockpot. In a medium bowl, stir together the soup, broth, Worcestershire sauce, garlic, pepper and cornstarch. Pour mixture into crockpot. Mix well. Cover crockpot with lid, and turn heat to low. Cook for 10 to 12 hours. Remove lid, stir well and serve.

Crockpot Beef Curry Recipe

Ingredients You Will Need:

2 cups cauliflower florets

½ cup uncooked white rice

½ cup raisins

2 tablespoons all-purpose flour

1 tablespoon yellow curry powder

1 teaspoon minced garlic

¼ teaspoon ground black pepper

¼ teaspoon salt

1 pound beef stewing steak, cubed

1 cup beef broth

¼ cup water

Place cauliflower, rice and raisins in a medium crockpot, at least 2 quarts in size. Combine flour, curry, garlic, pepper and salt together in a large plastic bag. Place cubed meat in bag. Shake bag, and cover meat with mixture. Pour beef and remaining mixture into crockpot. Pour beef broth and water into crockpot. Mix well. Cover crockpot with lid, and turn heat to low. Cook for 10 hours. Remove lid, stir and serve.

Must we re-think the weekly menu and grocery list 52 times a year! What if we create a basic monthly menu and general shopping list which can be used over and over? Of course, this is flexible, and new items can be added to your menu while the ones you're tired of can be deleted, but the idea is to MAKE a menu plan, PRINT IT OUT and take it with you when you MUST make an emergency trip to the grocery store.

Easy Great Tasting Chicken and Barley Crock-Pot Stew

Another comfort food I remember from my youth is a barley soup or stew my mother used to make. Back in the 30's and 40s many electric stoves had a deep well cooker that made the soups, stew, beans.

These days a crock pot is used as a separate appliance to make these same slow cooked dishes. My mother used beef chunks for the stew she made. My version is similar I'm sure but does not involve the use of red meat. Slow cooking seems to give soups and stews a much better flavor than the same things made in a hurry. This one is a good one, and like many crock pot dishes, the flavors seem to get better with age. Maybe we should schedule making our slow cooked meals two days ahead, then let them age and then reheat before serving.

Beef Stew

Easy Chicken and Barley Crock Pot Stew

Ingredients

1 tablespoon olive oil
1 lb boneless, skinless chicken breast, cut into bite sized pieces
2 cups pearl barley
2 carrots, diced
4 potatoes, peeled and diced
1 teaspoon salt
1/4 teaspoon black pepper
2 stalks celery, chopped
4 cups chicken broth (or water)
1 onion, minced

Note - This recipe will make a stew that may be thinner than you like. It could be served as is over rice, but if you want a thicker stew, you could coat the onion and chicken with flour and cook in a skillet as in step 1 below. This would give a "stand-alone" dish more the consistency of a casserole.

Instructions:

1 - Cook onion in a skillet on low heat until translucent.
2 - Dump onions and rest of ingredients into a crock pot cooker.
3 - Heat on high for 5 hours.

If you have a home fire pit, you should put it to good use. Not only is a fire pit great for cooking and pretending you're on a camping trip, but it's a great thing to have for a bonfire party in the fall just before it starts to get too cold to stay outside for long periods of time. And there's nothing like warm, comforting crockpot recipes to make your guests feel welcome. Here are some ideas:

Crockpot Pulled Pork
The key to making great pulled pork is to get large meaty cuts of pork. It's not at all a difficult dish to make, especially in a crockpot. So try to find the meatiest cuts you can. If you can get the more tender cuts, that's great, but it's not necessary because of the long slow cooking. Before you place it in the crock-pot, cut off the fat and chop it into smaller chunks. Add minced onion and your favorite barbecue sauce, turn on the crock-pot on low and let it cook for several hours (about six to eight).

Crockpot Beef Stew
Beef stew is great to make in a crockpot and you can add whatever vegetables you'd like. Most traditional recipes call for onions, carrots, and potatoes, but you could also combine parsnips, rutabagas, turnips, and tomatoes. To make the basic beef stew, you'll need about three pounds of trimmed and chopped stew meat. Place this in the crockpot with water, salt, and pepper. Then add your prepared and chopped vegetables. Add seasonings and condiments to your taste-Worcestershire sauce, vegetable or tomato juice, tomato or mushroom soup, or soy sauce. Turn your crockpot to the low setting and let the mixture cook for about ten hours.

Crockpot Bread Pudding
Crockpots are not as celebrated for their dessert-making capabilities, but they do just as well as an oven in making delicious desserts. To close out your party, a wonderful bread pudding is a great idea. The best bread to use for bread pudding is the stale French type. Break it up into cubes. Combine your flavorings like chocolate, fresh or dried fruit, vanilla, fruit peels, or brandy, and layer these on top of the bread cubes inside the crock pot. Mix sugar with eggs, milk, and butter, and pour over the mixture at the bottom and cook for about an hour and a half or slightly longer.

From chilly Bogotá, Colombia's mountain-located capitol city, through aromatic seafood soups from the Pacific coast to the steaming goodness of Cali, Salsa music capitol of Colombia, here are some of the country's best soups.

Here Are Six Succulent Soups from Colombia

" Sancocho de Gallina

The national dish of Colombia, this hearty soup is made with a whole stewed chicken or rooster including the feet. Added in are yucca, yellow plantain, potatoes, carrots, onions, garlic, and seasonings. It's served with a bed of steaming white rice and fresh slices of locally-grown avocado.

" Mondongo

A truly hearty meal in which cubes of tripe are cooked until tender, then added into a stew of vegetables like yucca, yellow plantain, potatoes, carrots, onions, garlic, peas and seasonings. It's also often served with a bed of steaming white rice. A cold, locally-brewed beer goes well with this too.

" Ajiaco

As creamy a soup as they get, this specialty of Bogotá is made with tender chicken breast, two varieties of potatoes; small yellow potatoes and white potatoes, yucca and lots of fresh whole milk to give it its characteristic creamy texture and light color. It's served with Guasca (a green, leafy vegetable) and Alcaparras (capers) and is a taste sensation you'll likely never forget.

Another milk-based soup commonly served in Bogotá and environs for breakfast. It is simple with beef broth, milk, and eggs as its main ingredients. Parsley is often sprinkled on top for added color and bouquet.

" Sancocho de Pescado

Along Colombia's Atlantic and Pacific coasts, this full version of the national dish is made with several types of seafood instead of chicken. Fried slices of yellow or green plantain accompany this dish as does white rice cooked in coconut milk instead of water. Sliced fresh avocado, tomato and fried fish are often piled on a platter next to the bowl of soup which is actually more like a stew.

" Caldo de Costillas

The third highest capitol city in the world, Bogotá can get quite chilly mornings and late evenings year-round. For a great chilly morning pick-me-up you can't do better than a bowl of this simple beef broth cooked with white potatoes and a healthy slab of meaty beef rib thrown in, always still on the bone. Bread or arepa (a thick flour tortilla-like bread) on the side help fuel you up for a busy day in Colombia's capitol city. Add a hot cup of Colombia's rich, mild coffee and you're good to go for the day.

Feeling Adventuresome?

If you're feeling adventuresome, then by all means try the "Hormigas Culonas" ants from Santander, the flaky smoked shark called "Tollo", or dip into a stew of Iguana meat. But for me, I'll savor the flavors of these wonderful broths and hearty meals served with rice, fried plantain or a flat, toasted "arepa". Any way you try them, they're all simply delicious. Whether it's "exotic" foods or one of the locally-made traditional soups, your taste buds are in for a treat when you come to Colombia.

Basic Crab Stew Recipe

Basic crab stew recipes generally include a few everyday spices and a few everyday vegetables. Most recipes also use chicken stock rather than fish stock, which can be hard to find. But, when making gourmet seafood stew for your own family, nothing but the best will do.

You can make basic crab stew on the stove, or you can use a crockpot and slow cook it for several hours. Either way, it's delicious and perfect for when eaten in front of a fireplace on a cold winter evening.

Crab Stew Recipe

Ingredients You Will Need:

1 pound frozen crab meat

4 cups fish stock (see recipe below)

1 16-ounce can stewed tomatoes

1 can kernel corn

1 large green pepper, chopped

1 large onion, chopped

1 spice bag (see recipe below)

1 clove garlic, chopped

2 bay leaves

Set the frozen crab meat into a shallow dish, and set aside. Combine all other ingredients in a large saucepan, and bring it to a boil. As soon as it boils, reduce the heat, and simmer for about a half hour.

Remove the bay leaves, and add the crab meat to the stew. Simmer the stew until the crab is fully cooked. Do not serve undercooked, but take care not to overcook the stew, either. Serve with thick slices of bread.

Fish Stock

Ingredients You Will Need:

2 pounds of fish (heads and tails optional)

1 large onion

½ cup celery, including leaves

½ lemon, sliced

Whole cloves

Whole black peppercorns

Parsley

Salt

Boil all ingredients in about eight cups of water. Simmer for about one hour, stirring often. Strain the stock, discarding fish and bones.

Spice Bags

Spice bags can be made with cheesecloth, intended to be placed into the stew and withdrawn - bag and all before serving - or to be opened up and dumped into the stew when you make it. Use one tablespoon of each of the following spices: rosemary, thyme, parsley, saffron, black pepper and garlic salt.
