Cooking Mexican Food Recipes With Tequila

Tequila goes just as well with many authentic Mexican food recipes as citrus does. You can use it to give your food a special kick. Depending how you use it, it might only flavor the dish and not leave any trace of alcohol behind or it might be added at the last minute as a stronger flavoring and part of the dish itself.

If you are cooking a stew or soup, most of the alcoholic content will cook out by evaporation. Water boils at 212 degrees F but pure alcohol boils at 173 degrees F which is why this happens. Knowing this is important if you are concerned about serving such a recipe to a child but the fact that the alcohol disappears during cooking means it is safe to serve such recipes to minors.

Also, alcohol occurs naturally in a lot of foods, especially ripe apples and other food with a high sugar content. Usually a recipe with tequila only contains a tiny bit anyway.

Alcohol has a lower freezing point than water so if you are thinking about adding it to frozen desserts, bear in mind it might stop them from freezing. If you only need a tiny bit of tequila for a recipe you do not need to buy a large bottle. A little one-serving size (like those you get on airlines) is sufficient for most dishes.

How To Make Tequila Avocado Soup

Some avocado soup recipes contain sherry but tequila adds a bright and refreshing flavor in its place. You can serve this recipe as a light summer lunch or as an appetizer. Make sure everything is well chilled before you blend the soup.

Cut four avocados in half and scoop out the flesh. Put it in a food processor or blender with three and a half cups of chicken broth, two thirds of a cup of evaporated milk, two tablespoons of tequila, and a tablespoon of finely chopped green onion. Puree the mixture until it is smooth. You might need to do this in two batches.

Taste it, then add some cayenne pepper and salt if necessary, pulsing the soup again afterwards. This Mexican food recipe is nice served with chopped cilantro and sour cream and you will have enough for four servings.
