What You Need

  • Water
  • 10 medium red potatoes
  • 1/2 package chopped bacon pieces
  • 1 diced green bell pepper
  • 1 large finely chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 package cubed Velveeta cheese
  • 1 cup milk

How to Make It

Rinse, drain and then peel, slice chop and cut meat and vegetables into smaller bite sized pieces for easier handling and cooking. Set aside separately until needed.

Add just enough water to cover the potatoes and the diced red potatoes into a large stew pot. Add a dash or two of salt. Bring to a boil. Cover with lid and cook until the potatoes are tender.

Into a separate large saucepan or skillet over a medium heat, you will add the chopped bacon pieces, diced green bell pepper, chopped onion, and minced garlic cloves. Stir constantly while cooking until the onions are transparent. Saute until the green bell pepper and bacon piece are tender.

Drain off bacon drippings with the exception of about 1 teaspoon. Stir in the celery seed, salt and pepper. Saute for 1 to 2 minutes. Add this mixture to the pot of boiling potatoes and stir.

Reduce the heat to medium. Add the cubed Velveeta cheese and stir to help melt the cheese. Slowly add the milk, stir continually while heating the soup through until hot.
