Recipe for Lamb Stew with Curry
This makes enough to feed six to eight people and because it simmers on the stove, you can go away and do other things while it cooks. This delicious dish can be served with hot rice or with crusty bread to soak up the yummy juices. Leave the potatoes out of the recipe if you like, so you can serve it with mashed potatoes on the side.
What you will need:
- 1 onion, in thin wedges
- 4 cups chicken broth
- 1/2 cup all purpose flour
- 1 peeled, chopped apple
- 1 teaspoon salt
- 1 tablespoon curry powder
- 1/4 cup shortening
- 3 tablespoons minced parsley
- 2 potatoes, in 1 1/2 inch cubes
- 6 whole cloves, tied in cheesecloth
- 1 chopped green bell pepper
- 2 carrots, in 1/4 inch slices
- 1/4 teaspoon black pepper
- 2 lbs lamb stew meat, in 1 1/2 inch cubes
- 14 1/2 oz can whole tomatoes in juice
- 1/2 teaspoon ground cinnamon
- Hot cooked rice, to serve
How to make it:
Mix the flour, salt, and black pepper in a plastic bag, add the meat and shake well to coat it. Melt the shortening in a big pot, and then add the lamb and the remaining flour. Brown the meat over a moderately high heat, then add the undrained tomatoes, apple, onion, and broth.
Bring the stew to a boil, and then add the cinnamon, cloves, and curry powder. Turn the heat down, cover the pan, and simmer it for an hour. Add the carrots, green bell pepper, and potatoes. Let the mixture simmer for half an hour or until the meat and vegetables are tender. Stir in the fresh parsley. Take out the cloves. Serve it with rice.
