Comfort food. Even the words sound warm and welcoming - like toasting your toes up by the fire on a cold winter day. Comfort food trends have seen a real resurgence in recent years and our desire for comfort food seems to be holding strong. So what is comfort food? Generally it's the food we have good memories about, the food we think of when we hear the word homemade, and the food that reminds us of simpler times.
The list of favorite comfort foods can be different for each of us. While homemade macaroni and cheese and meatloaf with mashed potatoes have been staples for many of us, for some of us comfort food may include a delicious cheesy lasagna, or yummy pad thai. We all tend to love the food that takes us back to our roots - the foods we grew up with.

There are people who watch food trends. These comfort food trend watchers say that we are craving the foods we grew up with. People enjoy their homes and want to entertain at home. We're expressing an interest in cooking everything from easy party food recipes to BBQ to slow cooked roasts with all the trimmings.
We also want to experience different tastes, sometimes tastes from around the world, sometimes the familiar foods we love, with twist or an extra bit of pizzazz. So we have things like garlic mashed potatoes, four cheese macaroni and cheese and thin crust gourmet pizzas.

We're also a population that is becoming more aware of health and making healthy food choices. Aging baby boomers are creating a bulge in our populations, but don't want a bulge in their waistlines, so healthy lifestyle trends are front and center. We want fewer calories but all the taste, healthier eating with the comforts of our favorite foods. So where does this leave us? How do we combine comfort food trends with healthier lifestyle trends?
As much as we love our comfort foods many of us now look for ways to turn them into healthier choices, with a lower fat content and fewer calories. We tweak those great recipes from the past so we maintain (or sometimes even improve) the taste but forgo some of the fat, unhealthy carbs and sugar content. And while most of us are still eating our favorite comfort foods, maybe it's just a little less often. We might decide to share that piece of amazing cheesecake so we get the taste but not the pounds.
We're going back to our roots - but with healthy food choices in mind and a few wonderful, tasty twists along the way.

Carne Guisada (Beef Stew) - One of the Original Texas and Tex-Mex Comfort Foods

In the early years of Texas statehood, Tejanos (Texans of Hispanic descent) made a beef stew similar to this carne guisada (literally means "meat in gravy"). The only difference was that the word "carne" (meat) was not included in the name or very often, nor was it found in the pot either.

Carne guisada has some similarities to chili. The biggest difference is that the meat is the star in the guisada, while the chile peppers, and their combinations, are emphasized in chili.

Beef Stew

This simple beef stew, as well as other similar versions of carne guisada, are found in many Texas and Tex-Mex restaurants today. Although most carne guisada recipes call for the pot to be cooked on the stove top, this beef stew is slow-cooked, or baked, in the oven. This results in the meat being more tender. The results of either method should be a very thick stew, without much liquid.

Carne guidada can be served in a bowl by itself, or used as a filling for soft tacos, inside either corn or flour tortillas. It is considered one of the "comfort foods" of Texas and Tex-Mex cooking, and remains a favorite of these cuisines today.

Ingredients:

1 1/2 pounds beef chuck roast, cut in bite-size pieces

2 tablespoons all-purpose flour

1 vegetable tablespoon oil

1 medium onion, chopped

3 celery stalks, chopped

2 fresh jalapenos, minced

1 1/2 cups unsalted beef stock

1 tablespoon tomato paste

2 teaspoons ground cumin

1/2 teaspoon good chile powder

Directions:

Preheat the oven to 350 degrees F. Lightly dust the meat pieces with the flour. Heat the oil over high heat, in a Dutch oven or large skillet. Brown the flour-dusted meat quickly. Add all remaining ingredients, and simmer on the stove for about five minutes.

Cover the Dutch oven or skillet, and place it in the oven. Bake for about 2 hours. By this time the meat should fall apart at the touch. Serve immediately.

  • 4 large cubed potatoes

  • 2 stalks chopped celery
  • 2 cans whole tomatoes
  • 1 clove crushed garlic
  • salt and pepper
  • 2 tablespoons flour

How to Make It

Place your meat into the Crockpot with enough water to cover it, season to taste, and add flour. Turn the heat setting to low and allow to sit for 8 hours. About an hour before serving, add in your vegetables and serve hot.

Cast Iron Enamel Cookware is the Perfect Choice for Fall Comfort Food

On a recent chilly fall day I had a hankering for beef stew, and the process of preparing it re-acquainted me with the old cast iron Dutch oven found years ago by my mother in an antique store, which I had since ignored and allowed to accumulate dust in the basement.

While vigorously scrubbing it with steel wool, I was reminded of the whole reason the thing was banished to the basement in the first place. It's very difficult to clean, and like all cast iron cookware, it needs proper seasoning before you can use it. It can't be put in the dishwasher because the iron will rust, and must always be coated with a layer of fat in order to keep it properly seasoned. Cast iron enthusiasts regularly debate the merits of shortening versus vegetable oil as the perfect seasoning. In fact, the process of properly seasoning cast iron cookware is an art unto itself. Maybe achieving the perfectly seasoned cast iron pans is a rewarding experience, but who has the time?

You may wonder why anyone would go to all that trouble. Cast iron has excellent heat retention properties that make it very energy efficient. You can achieve ideal cooking temperatures on medium and low heat settings, reducing the risk of burning or drying out your food. It is perfect for the long, slow cooking of our favorite comfort foods. When you remove the cast iron pot or pan from the heat source, it retains the heat for a long period of time, so your food will stay hot longer than food prepared in cookware made of other materials. The heavy, thick metal resists warping and lasts forever. These properties are why so many people, undaunted by hand washing and the need to keep it properly seasoned, swear by cast iron cookware.

Fortunately, there is another kind of cast iron cookware that gives the cook all the benefits of cast iron cooking without the drawbacks. Cast iron can be enameled, a process that seals the iron in layers of vitrified enamel. This process has numerous benefits. It eliminates the need to keep the iron properly seasoned. The smooth, glassy finish of the enamel is much easier to clean, and cast iron enamel cookware can be placed in the dishwasher. The smooth finish also allows you to safely use this type of cookware on all types of heat sources including ceramic and induction cook tops. The enamel layer allows you to cook with tomatoes and other acidic ingredients that usually react unfavorably with cast iron. And the enamel can be produced in any number of colors, like fire engine red or lemon yellow, making it a perfect choice for today's design-conscious kitchen. It's so attractive that your stew or roast cooked in a cast iron enamel Dutch oven can go right from the oven to the tabletop.

I ended up making my beef stew in my old Dutch oven and it was indeed one of the tastiest stews I ever made. It simmered gently in the oven for hours and stayed piping hot when placed on the dinner table. But unfortunately, the cleanup process confirmed that it was going right back down to the basement. Now I have a set of attractive enameled cookware hanging from my kitchen pot rack (with a matching Dutch oven), and my antique cast iron Dutch oven is again in need of a good dusting.

Dutch Oven Beef Stew

1 tablespoon vegetable oil,

2 pounds boneless beef chuck roast, trimmed, and cut into bite-sized pieces

8 ounces kielbasa, sliced in half lengthwise then sliced into bite-sized half circles

2 onions, coarsely chopped

1/2 teaspoon garlic salt

freshly ground black pepper, to taste

1 cup dry red wine

1 (10 ounce) can condensed cream of mushroom soup

1 (10 ounce) can condensed cream of celery soup

1 (8 ounce) can diced stewed tomatoes

5 medium potatoes, peeled and cut into bite-sized cubes

2 cups carrots sliced into bite-sized rounds

1/2 cup barbecue sauce

1 cup frozen green peas

1 (8 ounce) can lima beans, drained

Pre-heat oven to 300 F. In a large Dutch oven with ovenproof handles, heat the vegetable oil over medium-high heat. Add beef to the Dutch oven and brown well, stirring often. If your Dutch oven is rather small, do this in batches rather than trying to brown all the beef at once. Return all beef to the Dutch oven, add onion and kielbasa. Saute until onion is translucent, stirring often. Stir in garlic salt and pepper. Add red wine and stir to loosen browned bits. Stir in both canned soups, tomatoes with their juice, potatoes, carrots and barbecue sauce. Stir well, cover and and bake in oven for at least 3 hours. Before serving, remove the Dutch oven and place it on the stove over medium-high heat. Reduce, stirring often, until sauce thickens to desired consistency. Add green peas and lima beans and stir until heated through. Serves 10.

Winter Comfort Foods

Why celebrate comfort foods? Why not? At Plugged In Parents, we love a good, hearty bowl of soup that warms the body inside out and a slice of crusty bread followed with a mug of hot cocoa while cozying up on the couch. If you're like us, then you'll love these wintery meal ideas. They're great as leftovers and the ingredients will keep you on budget.

VEGETARIAN WINTER STEW

Ingredients:

5 cups chicken or vegetable broth

2 sweet, peeled and diced

2 large zucchinis, diced

1 large onion, diced

1 cup cooked rice

1 can kidney beans

1 can garbanzo beans

1 cup peanut butter

1 tbs cumin

salt

pepper

1 large jar of medium salsa (Pace is my favorite for this recipe)

Brown onion on hot oil, add sweet potatoes and fry for 10 minutes on low heat. Add zucchini. Fry stirring occasionally until the zucchini is crunchy-soft. Transfer vegetables to hot broth. Add beans and salsa. Stir in cumin, and salt and pepper to taste. Add peanut butter and stir well. Add rice.

TIP: The rice will absorb some of the broth overnight and the stew will be deliciously thick.

PERFECT WINTER BEEF STEW

Ingredients:

2 lbs beef, cut into 1-inch chunks

½ cup of Italian dressing

4 cups beef broth

1 cup chopped onion

3 cups diced carrots

4 medium potatoes, diced

3 cups sliced mushrooms (optional)

1 medium can stewed tomatoes

Mix beef with Italian dressing. Refrigerate 30 minutes.

Add onions and mushrooms and sauté for ~10 minutes. Add the broth, carrots, potatoes, meat without the dressing, and tomatoes with their liquid. Bring to boil stirring occasionally. Let simmer for 1 hour. Uncover, and let simmer for additional 15 minutes until the meat is tender and the sauce has thickened.

Garnish with parsley or green onions.

Serve with fresh bread, toast, or pita chips.

In 1 tablespoon vegetable oil

2 pounds beef chuck roast boneless trimmed and cut into small pieces

8 ozkielbasa in half lengthwise and then slice a piece of cut semicircles

2 onions chopped coarsely

V. 2.1 tsp garlic salt

ground black pepper to taste

1 cup dry red wine

1 (10 oz) condensed cream of mushroom soup

1 (10 oz) condensed cream of celery

1 (8 ounces) diced tomatoes stewed

5 medium potatoes, peeled and cubed bite

2 cups sliced carrots bites

Grill Mug 02:01Sauce

1 cup frozen peas

1 (8 ounce) can beans, drained

Pre-oven to 300 F. In a large Dutch oven with handles fire resistant, heat vegetable oil over medium heat. Add beef to Dutch oven and brown well, stirring often. If your Dutch oven is quite low, try this instead of batches, brown the meat at once. Return all meat to Dutch oven, onion and kielbasa. Sauté until the onion is transparent, stirringfrequently. Add garlic, salt and pepper. Add red wine and stir until slightly 'gold dissolved. Stir in both cans of soup, tomatoes with their juice, potatoes, carrots and barbecue sauce. Mix well, cover and cook for 3 hours. Before serving, remove from oven and place on stove over medium heat. Reduce, stirring often, until the sauce thickens to desired consistency. When I cook my lovely mother, think crusts flaky, cakes, cinnamon rolls and delicious stew Anderson. I learned that the stew was originally in Hungary, but our ancestors came from Denmark and Scotland. So why goulash?
