Cast Iron Enamel Cookware is the Perfect Choice for Fall Comfort Food

On a recent chilly fall day I had a hankering for beef stew, and the process of preparing it re-acquainted me with the old cast iron Dutch oven found years ago by my mother in an antique store, which I had since ignored and allowed to accumulate dust in the basement.

While vigorously scrubbing it with steel wool, I was reminded of the whole reason the thing was banished to the basement in the first place. It's very difficult to clean, and like all cast iron cookware, it needs proper seasoning before you can use it. It can't be put in the dishwasher because the iron will rust, and must always be coated with a layer of fat in order to keep it properly seasoned. Cast iron enthusiasts regularly debate the merits of shortening versus vegetable oil as the perfect seasoning. In fact, the process of properly seasoning cast iron cookware is an art unto itself. Maybe achieving the perfectly seasoned cast iron pans is a rewarding experience, but who has the time?

You may wonder why anyone would go to all that trouble. Cast iron has excellent heat retention properties that make it very energy efficient. You can achieve ideal cooking temperatures on medium and low heat settings, reducing the risk of burning or drying out your food. It is perfect for the long, slow cooking of our favorite comfort foods. When you remove the cast iron pot or pan from the heat source, it retains the heat for a long period of time, so your food will stay hot longer than food prepared in cookware made of other materials. The heavy, thick metal resists warping and lasts forever. These properties are why so many people, undaunted by hand washing and the need to keep it properly seasoned, swear by cast iron cookware.

Fortunately, there is another kind of cast iron cookware that gives the cook all the benefits of cast iron cooking without the drawbacks. Cast iron can be enameled, a process that seals the iron in layers of vitrified enamel. This process has numerous benefits. It eliminates the need to keep the iron properly seasoned. The smooth, glassy finish of the enamel is much easier to clean, and cast iron enamel cookware can be placed in the dishwasher. The smooth finish also allows you to safely use this type of cookware on all types of heat sources including ceramic and induction cook tops. The enamel layer allows you to cook with tomatoes and other acidic ingredients that usually react unfavorably with cast iron. And the enamel can be produced in any number of colors, like fire engine red or lemon yellow, making it a perfect choice for today's design-conscious kitchen. It's so attractive that your stew or roast cooked in a cast iron enamel Dutch oven can go right from the oven to the tabletop.

I ended up making my beef stew in my old Dutch oven and it was indeed one of the tastiest stews I ever made. It simmered gently in the oven for hours and stayed piping hot when placed on the dinner table. But unfortunately, the cleanup process confirmed that it was going right back down to the basement. Now I have a set of attractive enameled cookware hanging from my kitchen pot rack (with a matching Dutch oven), and my antique cast iron Dutch oven is again in need of a good dusting.

Dutch Oven Beef Stew

1 tablespoon vegetable oil,

2 pounds boneless beef chuck roast, trimmed, and cut into bite-sized pieces

8 ounces kielbasa, sliced in half lengthwise then sliced into bite-sized half circles

2 onions, coarsely chopped

1/2 teaspoon garlic salt

freshly ground black pepper, to taste

1 cup dry red wine

1 (10 ounce) can condensed cream of mushroom soup

1 (10 ounce) can condensed cream of celery soup

1 (8 ounce) can diced stewed tomatoes

5 medium potatoes, peeled and cut into bite-sized cubes

2 cups carrots sliced into bite-sized rounds

1/2 cup barbecue sauce

1 cup frozen green peas

1 (8 ounce) can lima beans, drained

Pre-heat oven to 300 F. In a large Dutch oven with ovenproof handles, heat the vegetable oil over medium-high heat. Add beef to the Dutch oven and brown well, stirring often. If your Dutch oven is rather small, do this in batches rather than trying to brown all the beef at once. Return all beef to the Dutch oven, add onion and kielbasa. Saute until onion is translucent, stirring often. Stir in garlic salt and pepper. Add red wine and stir to loosen browned bits. Stir in both canned soups, tomatoes with their juice, potatoes, carrots and barbecue sauce. Stir well, cover and and bake in oven for at least 3 hours. Before serving, remove the Dutch oven and place it on the stove over medium-high heat. Reduce, stirring often, until sauce thickens to desired consistency. Add green peas and lima beans and stir until heated through. Serves 10.

Making Perfect Crockpot Recipes With Fire Pits

Have you ever been cooking indoors, and yearned to be outside enjoying the gorgeous weather? Maybe it is summer, and the sun is shining and the sky is clear blue. Or, maybe it is autumn where you live, and the leaves have turned a crisp golden brown. Maybe it is even winter time, and the snow flakes are sparkling in the cool air. Whatever season it is, it is always the perfect season to do your crock pot cooking on a fire pit outdoors.

There are many recipes that can simply be catered to cooking on your crock pot. One scrumptious recipe that can be cooked on a pit is french onion soup. The steps are very simple. First, chop up two onions of your favorite kind. I prefer to use yellow onions, only because they are usually on sale at the grocery store! Fry these up in a pan. After you have fried up the onions, you can add them to a crock that you will take outside. Pour one can of beef stock broth into a large pot along with the fried up onions.

After you have created this special mixture, take it out to your fire pit. Leave it on the fire pit for about 20 minutes, stirring it every now and then. You can also keep an eye on it. After the onions have become tender, you can take the pot off of the fire pit. Pour into bowls, and don't forget the croutons and cheese! Sprinkle some of your favorite cheese on the bowls of soup, and you have just created an entire meal using your fire pit!

Another great recipe to cook on a fire pit is vegetable beef stew. Simply put a beef roast in your favorite crockpot, along with a can of dark soda. Include your favorite spices and vegetables in the mix. Some great vegetables to add into the mix are baby carrots and celery. Simply keep your crockpot on low, and enjoy the amazed looks on your guests' faces! You can eat the roast beef alone or choose to make hearty sandwiches with the beef. The choice is yours!

In 1 tablespoon vegetable oil

2 pounds beef chuck roast boneless trimmed and cut into small pieces

8 ozkielbasa in half lengthwise and then slice a piece of cut semicircles

2 onions chopped coarsely

V. 2.1 tsp garlic salt

ground black pepper to taste

1 cup dry red wine

1 (10 oz) condensed cream of mushroom soup

1 (10 oz) condensed cream of celery

1 (8 ounces) diced tomatoes stewed

5 medium potatoes, peeled and cubed bite

2 cups sliced carrots bites

1 cup frozen peas

1 (8 ounce) can beans, drained

Pre-oven to 300 F. In a large Dutch oven with handles fire resistant, heat vegetable oil over medium heat. Add beef to Dutch oven and brown well, stirring often. If your Dutch oven is quite low, try this instead of batches, brown the meat at once. Return all meat to Dutch oven, onion and kielbasa. Sauté until the onion is transparent, stirringfrequently. Add garlic, salt and pepper. Add red wine and stir until slightly 'gold dissolved. Stir in both cans of soup, tomatoes with their juice, potatoes, carrots and barbecue sauce. Mix well, cover and cook for 3 hours. Before serving, remove from oven and place on stove over medium heat. Reduce, stirring often, until the sauce thickens to desired consistency. A boil-up is a tasty, cooked root vegetables such as potatoes, Kumara (sweet potato), pumpkin or bone marrow (Kamo Kamo) with vegetables such as watercress, spinach or cabbage soup. Dumplings, known as "Doughboys" generally known to enjoy a meal to accompany the full goodness.

In this recipe, I used the pork bones. This recipe is equally successful with a variety of vegetables before and works with most cuts of red meat and sausagesor canned meat. This is probably the best of all, a good meal is very cheap for us cooks. There is also a good way for a group of people or feed the hungry party.

The same soup and a meal, so this recipe has become a new menu selection Zealand after a binge drinking habits.

Try, if established as prepared is safe to provide the hungry and satisfy the skeptics. For the conversion, not sure of beating its rivals, like Mom used to makeit.

Ingredients for six
1 kg of pork bones (or pork or 1 kg of salt beef rib cage or similar)
2 tablespoons sea salt
Potatoes 6
Three Kumara (sweet potato)
6 pieces of zucchini (leave the skin and remove seeds)
2 bunches watercress or Puha (or half a cabbage, bok choy or chard, cut into pieces)

Doughboys:
A cup of flour
1 teaspoon salt
04:01 cup water

Preparation:
Place pork bonesFill a large pot and add salt with water (to fill an inch above the meat). (No salt, if necessary, dried meat) is used to boil and cook for 1 hour to be sure to check the water level remains above the meat. When the hour is to ensure grease removed from the water, if necessary, add the watercress (to be split into two halves) in pan and cook for 20 minutes, then add the potatoes, pumpkin and Kumara. Make sure the vegetables cut up rootsame size for even cooking. Keep the pot and cook for 15 minutes before adding the pasta boys and a fully equipped kitchen for a further 20min.

Preparation Doughboy:
Sift dry ingredients into a bowl, add water and stir in a mixture of sticky dough. Pour over vegetables roots.

Serve in large soup bowls with bread and butter. Enjoy ...

In the case of cabbage or Swiss chard is used instead of watercress or Puha, cook the meat for 1h 20min and add root vegetablesand after 15 minutes add the cabbage, etc. Doughboys and full kitchen for 20 minutes.

Leftovers can be heated up later in the pot to the heat, but not boil, the differences can be covered and the heat in the microwave.
