making Goulash

Think of Goulash as a kind of casserole dish where pieces of choice braised steak/beef stew moderately in a casserole dish for a few hours. Still in Hungary, where the dish is originally from, there is that distinctive dish called Goulash but in other countries, it can be determined a type of casserole dish and this is perhaps a good way to view the dish called Goulash. Originally, it may have been more a stew or a heavy type of soup but the basic belief behind Goulash can be used to make a distinctive casserole-like dish.

Goulash is a Hungarian dish but you can use the basic belief of a Goulash and make it into a version that suits you. Tomatoes were not or are not used in the original Hungarian dish so it is your own version you would be making.

Beef Stew

Heat the oil until it is approximately sizzling. Then put the braised beef in. This is a recommended way of cooking the braised beef which will then be later put in the casserole to cook slowly. With the beef in the hot oil, take out when it is a nice brownish texture. Cook the chopped onions for 5-6 minutes. Then you can put the beef pieces back and start adding the ingredients. Add the flour and pimenton. (It is advised sometimes to use a tbsp of moderately smoked pimenton and then a tbsp of hot pimenton. Yes, it can be noted how pimenton can be hot smoked and then moderately smoked. You are adding pimenton to the dish as if to get a convenient blend of pimenton. You are aiming to get the right hotness for the dish, the right texture and feel and you are using a hot smoked pimenton as well as moderately smoked pimenton. )

Stir the blend and add the bay leaves and the chopped tomatoes. Then cover the casserole tightly and cook in the oven for 2 ½ hours. You stir in the chopped red peppers approximately a half hour before the end ( having removed the seeds and pith).

The peppers add to the pungency of the dish, and the pimenton has already of procedure been added. For two slow hours, the pimention is blending with the braised beef, as well as the flour, onions and garlic. Note the mix of garlic and pimenton. Christmas and Tamale Making in Central Texas

It is that time of year, when families gather and eat, celebrate and for many cultures, make tamales.  The making of tamales is a wonderful tradition in the Hispanic culture. And if you haven't tried a true hand-made tamale, you don't know what you are missing.

Tamales today represent not just a food for Hispanic cultures but a tradition, whereupon around Christmas, families get together to make these wonderful dishes. Tamales are also often made and eaten during festivities for the Day of the Dead, Las Posadas and Mexican Independence Day. Tamales today are considered a comfort food in Mexico, eaten as both breakfast and dinner, and often accompanied by hot Atole or Champurrado.

Tamales are said to date back to 1519, even though the maize-based tortilla most likely predates even this. The tamale was eaten as a celebration food in Mesoamerica as early as 8000 to 5000 BCE. Aztec and Maya civilizations as well as the Olmeca and Tolteneca before them used tamales as a portable food, often to support their armies but also for hunters and travelers. There have also been reports of tamale use in the Inca Empire long before the Spanish visited the new world.

Tamales were one of the main staples found by the Spanish Conquistadors when they first arrived in Mexico. This discovery spread the knowledge of the tamale around the world.

Tamales are made by families due to the fact they are made in such large quantities.  Batches of tens and hundreds are made at one time.  A tamale is made by spreading corn masa, which is made of dried corn simmered with lime and ground on a stone metate, over the top of dried corn husks. Flavoring is added to masa in the form of a paste made of chiles, meat or beans. The whole bundle is then wrapped and steamed in a clay cazeula.  Today, aluminum steamers have replaced the cazeula and masa can be purchased rather than made. Traditionalists still make their masa with a good amount of lard mixed in.

Tamales are filled with various types of meat rather than beans. Meats can include shredded chicken, shredded pork cooked with cumin, chili powder and garlic powder, or even ground beef. A greed or red chili sauce is also stewed together and added to the masa before cooking. You can also save the sauce for spreading over your tamale after taking it out of the corn husk to eat.

If you were never taught to make tamales authentically, there are tamale-making classes available in cities such as San Antonio. Because the tradition is so popular, the San Antonio Public Library and the Witte Museum began their glasses in November. The classes book up quickly, so be sure to pre-register.

Directions For Making Slow Cooker Chili

One of the best ways to make a hot meal with beef is by using the slow cooker.  This is also one of the easier ways to cook beef as well because it does not require a lot of work on your part.  You simply have to prepare the ingredients and then let it cook while you go about your daily business.  One of my favorite meals to make in the slow cooker is chili.  This article will tell you exactly how to make great tasting chili in just a few simple steps.
First, you’ll need to gather the ingredients for making the chili.  The ingredients are as follows:
1 lb. ground beef
1 can (1 lb.) stewed tomatoes
1 can (15 1/2 oz.) chili beans
1 can (8 oz.) tomato sauce
1 c. chopped onion
Pepper
1 tsp. chili powder
1/2 tsp. salt
Once you have all the ingredients you can begin the process of getting it all together to be cooked.  The first step will be to brown the beef in a skillet and then drain the excess grease.  This will ensure that the beef is cooked thoroughly.   You’ll have to chop the onion if you haven’t already done so but once that is ready, you can combine the remaining ingredients together in your slow cooker.  If you wish you can mix the dry ingredients together in a separate bowl before adding them to the slow cooker.  When you have everything mixed together, you can add it to the cooker along with all of the other ingredients.
When you have combined all of the ingredients and placed them in the cooker, you can set the temperature to high and then cook the entire contents for about 8 hours.  The reason cooking this chili is so convenient is because if you have to work or leave the house for an extended period of time, you don’t have to worry about whether or not the meal is going to cook properly.  The slow cooking process allows you to cook the chili over the 8 hours without having to watch it.
When the chili has finished cooking, simply stir and serve once it has cooled enough.  Chili can also be served as leftovers, or if you prefer, you can freeze it and then reheat it when you want to have another chili meal.  If you’re looking for a simple meal that doesn’t take a lot of time to cook and tastes great at the same time, try out slow cooker chili.  You’ll be amazed at how great it tastes and your family will love it too.

Making Gravy And Suet

To meats prepared in various ways, gravy--that is, the sauce made from the drippings or juices that cook out of steaks, roasts, and stews, or from the broth actually cooked from the meat as for soup--is a valuable addition, particularly if it is well made and properly seasoned. A point to remember in this connection is that gravy should be entirely free from lumps and not too thick. It will be of the right thickness if 1 to 2 level tablespoonfuls of flour is used for each pint of liquid. It should also be kept in mind that the best gravy is made from the brown drippings that contain some fat.
To make gravy, remove any excess of fat that is not required, and then pour a little hot water into the pan in order to dissolve the drippings that are to be used. Add the flour to the fat, stirring until a smooth paste is formed. Then add the liquid, which may be water or milk, and stir quickly to prevent the formation of lumps. Season well with salt and pepper. Another method that also proves satisfactory is to mix the flour and liquid and then add them to the fat that remains in the pan in which the meat has been cooked.
TRYING OUT SUET AND OTHER FATS
The suet obtained from beef is a valuable source of fat for cooking, and it should therefore never be thrown away. The process of obtaining the fat from suet is called trying, and it is always practiced in homes where economy is the rule.
To try out suet, cut the pieces into half-inch cubes, place them in a heavy frying pan, and cover them with hot water. Allow this to come to a boil and cook until the water has evaporated. Continue the heating until all the fat has been drawn from the tissue. Then pour off all the liquid fat and squeeze the remaining suet with a potato masher or in a fruit press. Clean glass or earthen jars are good receptacles in which to keep the fat thus recovered from the suet.
To try out other fats, proceed in the same way as for trying out suet. Such fats may be tried by heating them in a pan without water, provided the work is done carefully enough to prevent them from scorching.

  • ¼ cup vegetable oil
  • 2 medium chopped onions
  • 1 ½ pounds cubed chuck beef

  • ½ teaspoon pepper
  • 1 Tablespoon paprika
  • ½ teaspoon crumbled dry marjoram
  • ½ teaspoon caraway seeds in cheesecloth or strainer
  • 2 chopped carrots
  • 2 chopped celery stalks
  • 1 chopped green bell pepper
  • 2 diced tomatoes
  • ½ cup water
  • 1 or 2 cubes beef bouillon
  • ¾ cup sour cream

How to Make It

Rinse and then dry the vegetables. Chop the carrots and celery into 2 inch bite size pieces and the green bell peppers into 1 inch bite size pieces. Set aside separately until needed.

Add the vegetable oil into a large skillet or saucepan over a medium heat setting. Add the chopped onions and saute until they are tender and golden in coloring. Add the cubed chuck beef, salt, pepper, paprika, crumbled dry marjoram, the caraway seeds in cheesecloth or strainer, chopped carrots, chopped celery stalks, chopped green bell pepper, and diced tomatoes. Stir to combine well and then add the ½ cup water.

Cover with lid and then reduce the heat to the lowest setting. Simmer for about 1 hour while occasionally stirring. Add the cubes of beef bouillon to add more flavors to the stew if needed after tasting. Cook on low setting for about 2 hours while occasionally stirring to prevent sticking and burning of the ingredients.

After cooking until done, you can serve this delicious Hungarian style beef stew over a bed of pasta noodles or with some delicious hot buttered mashed potatoes or cubes of cooked potatoes. Then again, you might like to make this stew to serve with white rice or even wild rice. Regardless of what else you may want to serve with it. Top the finished dish with the sour cream before serving to family and friends.

Making Beef Stew in a Crock Pot

I have several family members who are now venturing out on their own and starting their own homes, or going off to college. One of the first things I love to give is a crock pot. This is a versatile piece of equipment and it can even be used in some college dorms. I even tuck in a couple of easy recipes and some tips to get them started. Here is one of them for making beef stew. Adapted from an old recipe of my grandmother's, It is simple and anyone can follow the directions to make a delicious, hearty meal with little effort. The pot does most of the work of cooking the meal.

You will need:

Beef Stew

A crock Pot. I prefer one with a removable crock, but they all work well.

2 pounds of chuck or rump roast cut into 1 inch cubes. You can also purchase stew beef at the grocery. This is usually provided already cut into large chunks. I will usually cut each of these chunks into smaller, bite sized pieces.

1 cup chopped onions. You can cut these into large chunks if you prefer a chunky stew. Otherwise dice to about 1/4 inch pieces.

1 cup diced celery

1 cup carrot rounds. Cut the carrots into rounds that are bite sized. After washing and removing the ends, simply cut 1/4 inch slices from the carrots.

4 large potatoes, cut into bite sized pieces. I love using the buttery gold potatoes or small reds cut in half, but an Idaho will be fine..

2 cups canned or fresh tomatoes. I like to use the canned, chopped stewed tomatoes for a little extra layer of flavor.

2 teaspoons salt

1/2 teaspoon pepper

1 bay leaf

3 tablespoons flour

2 teaspoons olive or vegetable oil

2 cans or 1 quart chicken broth

1 can cream of mushroom soup

Saute' the onion, celery and carrots in the oil until the onion becomes translucent. Coat the meat pieces in the flour. Cook the meat with the onion mixture until just browned all over. This will add a good flavor to the stew. You could just add it to the pot without browning if you are in a hurry, but I suggest that you take the few minutes required for this step. It will give you a better flavor in the end.

Pour this mixture of meat and vegetables into the crock pot. drop in the bay leaf. You can go ahead and turn the pot on to let it get started heating up.

Pour the chicken broth, tomatoes, salt and pepper in, stirring well to mix the salt and pepper. Add the potatoes and give it one more stir.

If you haven't already, set the pot on high and cover. Let cook about 5-7 hours or until the meat is tender.

30 minutes before ready to serve, stir in the can of mushroom soup.

Heat your bread and toss together a quick salad. Serve with a steaming bowl of this hearty beef stew and you will see smiles around the table as your family and friends take comfort in the time-tested meal.

Making Beef Stew in a Crock Pot

I have several family members who are now venturing out on their own and starting their own homes, or going off to college. One of the first things I love to give is a crock pot. This is a versatile piece of equipment and it can even be used in some college dorms. I even tuck in a couple of easy recipes and some tips to get them started. Here is one of them for making beef stew. Adapted from an old recipe of my grandmother's, It is simple and anyone can follow the directions to make a delicious, hearty meal with little effort. The pot does most of the work of cooking the meal.

You will need:

A crock Pot. I prefer one with a removable crock, but they all work well.

2 pounds of chuck or rump roast cut into 1 inch cubes. You can also purchase stew beef at the grocery. This is usually provided already cut into large chunks. I will usually cut each of these chunks into smaller, bite sized pieces.

1 cup chopped onions. You can cut these into large chunks if you prefer a chunky stew. Otherwise dice to about 1/4 inch pieces.

1 cup diced celery

1 cup carrot rounds. Cut the carrots into rounds that are bite sized. After washing and removing the ends, simply cut 1/4 inch slices from the carrots.

4 large potatoes, cut into bite sized pieces. I love using the buttery gold potatoes or small reds cut in half, but an Idaho will be fine..

2 cups canned or fresh tomatoes. I like to use the canned, chopped stewed tomatoes for a little extra layer of flavor.

2 teaspoons salt

1/2 teaspoon pepper

1 bay leaf

3 tablespoons flour

2 teaspoons olive or vegetable oil

2 cans or 1 quart chicken broth

1 can cream of mushroom soup

Saute' the onion, celery and carrots in the oil until the onion becomes translucent. Coat the meat pieces in the flour. Cook the meat with the onion mixture until just browned all over. This will add a good flavor to the stew. You could just add it to the pot without browning if you are in a hurry, but I suggest that you take the few minutes required for this step. It will give you a better flavor in the end.

Pour this mixture of meat and vegetables into the crock pot. drop in the bay leaf. You can go ahead and turn the pot on to let it get started heating up.

Pour the chicken broth, tomatoes, salt and pepper in, stirring well to mix the salt and pepper. Add the potatoes and give it one more stir.

If you haven't already, set the pot on high and cover. Let cook about 5-7 hours or until the meat is tender.

30 minutes before ready to serve, stir in the can of mushroom soup.

Heat your bread and toss together a quick salad. Serve with a steaming bowl of this hearty beef stew and you will see smiles around the table as your family and friends take comfort in the time-tested meal.

Include your favorite spices and vegetables in the mix. Some great vegetables to add into the mix are baby carrots and celery. Simply keep your crockpot on low, and enjoy the amazed looks on your guests' faces! You can eat the roast beef alone or choose to make hearty sandwiches with the beef. The choice is yours!

Whether you are making a hearty beef stew, or adding additional liquid to make it a soup,there are some easy and basic tips you can use to get the most out of this comfort food.

Stock and Broth

Most of the people I know use water when building their soups and stews. Water is fine, but to add an additional layer of flavor a good broth or stock is necessary.

Broth is usually a more highly seasoned liquid. Think of an onion soup which is essentially a beef broth with the addition of the onions. It is well seasoned and does not have a strong flavor of its own so the onion flavors come through.

Stock, on the other hand has fewer seasonings and a more intense,rich and meaty flavor.

When making a soup or stew either of these options is better that plain water. Stock will give you a much richer and heartier flavor. You can purchase either option at the market, or you can make your own and store it in the refrigerator for up to about 2 weeks, or in the freezer for a couple of months. One of the added bonuses of making your own is that you can control the amount of salt. Did you know that one can of broth from the store has over 9 grams of salt? Not great if you are on a reduced salt diet.

TIP: Pour cooled homemade stock or broth into ice cube trays. Freeze and then remove to zipper bags, returning to the freezer. Now you can drop in a stock or broth cube, or a few, when you decide at the last minute that you want to create a great hearty meal. You get all the flavor of slow-cooked homemade, but without having to make the stock or broth from scratch first, OR using the highly salted ready-made versions.

Meat

You can use whatever cut of meat you like best, but if you want the best flavor to come through in your stew you need to brown the meat first. Oh, I know that you can drop the meat in a crock-pot with veggies, spices, and a can or stock and get a perfectly acceptable stew at the end of the day, but is that really good enough for you and your family when you can make it so much more with a few extra steps.

Browning the meat and including the pan drippings in your stew will add yet another layer of flavor that make you ordinary stew seem like a watered down cousin. Simply, dredge or coat your meat cubes in flour, shaking off any excess. Brown in a couple of tablespoons of vegetable or olive oil with the onions. You can also add chopped celery and carrots to the meat for even more flavor. In the south we call this mix of onion,carrots,and celery, the trinity. We use it everywhere!

Once you have browned the meat on all sides, begin to add your other ingredients. If you are using a crock-pot, add the meat and the pan drippings to the pot and then add the other ingredients.

Time

One of the things that makes a stew so hearty is the long cooking time. You just can't rush a hearty stew, so don't try. If you don't have the time to monitor the pot, use a crock-pot and cook it slowly all day. It is the long cooking time that creates the depth of flavors.

Additions

Adding barley, or rice to a stew adds to the thickness that designates stew. As the stew cooks for hours barley and rice tend to break down and help thicken the liquids while adding yet another subtle flavor.

If you only change one thing in your recipe consider using home-made stock or even a home-made broth instead of water. The difference in taste will surprise you and your family will appreciate the added attention to details that make yours the best stew in the neighborhood.

Making Goulash

Think of Goulash as a kind of casserole dish where pieces of choice braised steak/beef stew slowly in a casserole dish for a few hours. Still in Hungary, where the dish is originally from, there is that distinctive dish called Goulash but in other countries, it can be considered a type of casserole dish and this is perhaps a good way to view the dish called Goulash. Originally, it may have been more a stew or a heavy type of soup but the basic concept behind Goulash can be used to make a distinctive casserole-like dish.

Goulash is a Hungarian dish but you can use the basic concept of a Goulash and make it into a version that suits you. In the original Hungarian version, the meat is cut into chunks but you can make your cuts more cube-like. The kind of meat is important for a goulash and it is wise to choose a good braised beef, a nice beef/steak suitable for casseroles. Ingredients like sliced onions, red peppers and garlic are added to make the Goulash. There is also the Pimenton or Paprika. There are also the herbs like bay leaf and thyme. And then it is suggested that flour or cornstarch is used to thicken this casserole-like dish. There is a suggestion that tomatoes can be used and a tomato texture would certainly be interesting. Still the use of tomatoes do not seem to have been used in the original Hungarian version. Tomatoes were not or are not used in the original Hungarian dish so it is your own version you would be making.

Heat the oil until it is almost sizzling. Then put the braised beef in. This is a recommended way of cooking the braised beef which will then be later put in the casserole to cook slowly. With the beef in the hot oil, take out when it is a nice brownish texture. Cook the chopped onions for 5-6 minutes. Then you can put the beef pieces back and start adding the ingredients. Add the flour and pimenton. (It is advised sometimes to use a tbsp of moderately smoked pimenton and then a tbsp of hot pimenton. Yes, it can be noted how pimenton can be hot smoked and then moderately smoked. You are adding pimenton to the dish as if to get a suitable blend of pimenton. You are aiming to get the right hotness for the dish, the right texture and feel and you are using a hot smoked pimenton as well as moderately smoked pimenton. )

Stir the mixture and add the bay leaves and the chopped tomatoes. Then cover the casserole tightly and cook in the oven for 2 ½ hours. You stir in the chopped red peppers approximately a half hour before the end ( having removed the seeds and pith).

The peppers add to the pungency of the dish, and the pimenton has already of course been added. For two slow hours, the pimention is blending with the braised beef, as well as the flour, onions and garlic. Note the mix of garlic and pimenton. This is an interesting mix for a stewy dish like goulash and then there were the chopped tomatoes...and the flour, as mentioned, was added to give the dish a rich soupy texture.

At the end, cream can be used over the goulash or maybe you can add your own touch like some chopped tomatoes or pimenton.

Soups and stews make for delicious lunches and dinners any time of the year and when you use the crockpot to cook them, the flavors seem to blend together perfectly.

With just a few adjustments to cooking times and to the amount of liquids used, most recipes for soups and stew made on the stovetop can be converted for the crockpot. In general, you will have to cut the liquid or moisture used in a stovetop recipe in half when cooking in a crockpot.

Also, remember that when you are making dishes in the crockpot with noodles it is important to watch them carefully. Noodles can overcook easily becoming mushy and basically falling apart all throughout your soup or stew.

You will find that most recipes for soups and stews made in the crockpot call for adding the noodles 10 to 15 minutes before the end of the cook time. The exact time will also depend on the type of noodle and whether you are cooking on the high or low setting.

For soups and stews in the crockpot, try using different types of meats including various cuts of beef, poultry, and pork.

Ham cooks wonderfully in a slow cooker and can be combined with ingredients such as beans, cabbage, and potatoes. Pork chops and spare ribs fall off the bone effortlessly and are incredibly tender when cooked in the crockpot. Both can be served with potatoes, rice, and salad for a tasty meal.

Chicken and turkey are also ideal for soups made in a slow cooker. There is nothing quite like homemade chicken noodle soup and there are many delicious varieties of chicken soups to choose from including those with Asian, Mexican, and Southwestern themes, just to name a few.

How to Make Beef Barley Vegetable Soup in the Crockpot

What You Need


  • 1-1/2 to 2 cups water (Add 1-1/2 cups first)

  • 1-1/2 to 2 pounds of beef chuck roast or beef stew meat

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried thyme leaves

  • 2 cloves garlic, minced

  • 1 onion, chopped

  • 1 green pepper, chopped

  • 1 cup frozen green beans

  • 1 cup frozen corn

  • 2 cans (28 ounces total) diced tomatoes, un-drained

  • 2/3 cup pearl barley, uncooked

  • 8 ounces tomato sauce

  • 2 cans (28 ounces total) beef broth

How to Make It

Combine all of the ingredients in the order they are listed inside of a 3-5 quart crockpot.

With the lid in place, cook the soup on the low setting for 8 to 9 hours, or if you prefer, use the high setting for 4 to 5 hours. Stir only once halfway through the cooking time. Add the other half cup of water if necessary.

You will know that your beef barley vegetable soup is done when the barley, meat, and vegetables are all tender.

If you have a newer crockpot that may cook some foods faster, or you are not sure if the cooking times listed are accurate, check the soup at 7 hours when cooking on low or at 3-1/2 hours on the high setting.

Crock Pot Corned Beef - Making it Healthier

Crock pot corned beef is an excellent recipe to use as an example of how you can make a dish more "body friendly." That is, to make recipes healthier so you can maintain a healthy diet plan while consuming foods you like to eat.

This is important if your goal is to maintain a normal weight and your health. The fact that crock pot corned beef is tasty and easy to prepare make it all the more enticing.

What Is Corned Beef?

Corned beef is beef brisket bathed in salt and spices. It got its name from the large grains of salt originally used for this process known as "corns."

Beef brisket is a very tough cut of meat and boasts a large amount of fat. The salt and fat will have to be greatly decreased before you include crock pot corned beef in your healthy diet plan. This is easy to do but takes an extra step or two in the cooking process.

Pour the juice from the crock pot into a bowl and refrigerate overnight. The liquefied fat will float on top of the liquid. The cold from the refrigerator will cause the liquefied fat to congeal overnight. In the morning remove the congealed fat from the liquid by gently lifting it off the surface with a slotted spoon or spatula. Carefully decant the liquid back into the crock pot leaving the spices in the bowl. Discard the spices.

Cooked Vegetables Supply Fiber

In addition to the cabbage this dish is traditionally made with you may opt to add red potatoes, turnips, or rutabagas that have been peeled and cut into edible chunks. Cut the vegetables you want to include and place them into your crock pot.

Pour the defatted liquid over the vegetables. Place the corned beef brisket on top and smear with 3 Tbsp. of yellow mustard.

Cover the crock pot and cook 5 hours on low. The vegetables will be soft when finished. Any raw food enzymes present before cooking will have been destroyed by heat, as will most of the vitamins. The main nutritional benefit of this dish is the fiber found in the vegetables and protein from the meat.

Raw Vegetable Diet Supplies Nutrients

The loss of raw food enzymes and vitamins is why a raw vegetable diet component for most of your meals is a good idea. By consuming raw food diets nutritional food quality is retained.
