How to Braise - Inexpensive Cuts of Meat Make Delicious Soups & Stews

Wintertime is the ideal time for soups and stews. And the best meat to cook in these dishes is the meat that is generally the cheapest, because it requires longer cooking and more care. These are the meats that do well when they are braised.

Braising is simply cooking meat by first searing the outside in hot oil, then covering with liquid and cooking for a relatively long time, either on the top of the stove or in the oven. Both top-of-the-stove and oven cooking require cooking with less heat.

The best beef cuts to use would be chuck or shoulder, leg or round, shanks, and stew meat (listed separately here because it's often a collection of the odds and ends or trimmings left after butchering the rest of the animal. My personal favorite is beef shank; it has a lot of collagen or connective tissue that provides great flavor and texture after it's been cooked a long time. It used to be very inexpensive, but I've found recently that it costs about the same or a little more than stew meat. Still a pretty good bargain, and it does taste great.

In making a chicken stew, I stick to using legs and thighs. Their meat stands up to stewing better, retaining the flavor of the bird. Breast meat just doesn't hold up and seems to lose all its flavor. The chicken can be lightly sauted before being covered with liquid (the traditional fricassee), but you don't lose much by just putting the pieces in a pot and covering with water.

The traditional method of braising beef would be to season the meat with salt and pepper and then sear it quickly in hot oil to brown it on all sides. This accomplishes two things: the searing of the meat helps to hold the juices in, and the caramelizing of the exterior adds depth to the flavor of your liquid. When the meat is browned, it is removed from the pan and flavorings are added for a quick saute. (In the professional chef world, the flavorings are called mirepoix, a mix of onion, celery, and carrot, all chopped. The ratio is 2 parts onion to 1 part celery and 1 part carrot.) The vegetables sauted until they just start caramelizing, another part of the depth of flavor of your stock. Then the meat is returned to the pan and liquid is added, usually just water, to cover the meat. Bring the whole thing to a simmer and cook until the meat is tender.

The cooking can also be done in a 300 degree oven, but I've never been very successful with that. The need to peek and stir is too well ingrained; opening the oven and pulling the whole thing out so I can give it a stir just doesn't work for me.

You can also skip the entire part about the vegetables. While they do add to the flavor, not having them handy should not deter your braising efforts. The stew I grew up with did involve searing the meat, but then all was covered with water and onion and carrots added an hour or so later. And it was a pretty good stew!

Mirepoix also adds to the flavor of the broth in braising poultry. It is not sauteed, but rather added to the pot along with the stock. The vegetables here need to be a smaller chop than that for beef, because you're cooking the whole thing for less time, generally not more than an hour or so.

If you're making a stew, you might want to thicken your broth. The chef way would be to make a roux of equal parts butter and flour, cooking it a bit to take away the flour taste. Then you'd whisk in your stock and cook until it thickened. However, you can also make a slurry of flour and cold water to add to your broth. Whisk the cold water into some flour to the consistency of milk. Slowly add a bit at a time to your simmering stock, whisking well, until you get the consistency you want.

What You Need

  • Water
  • 10 medium red potatoes
  • 1/2 package chopped bacon pieces
  • 1 diced green bell pepper
  • 1 large finely chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 package cubed Velveeta cheese
  • 1 cup milk

How to Make It

Rinse, drain and then peel, slice chop and cut meat and vegetables into smaller bite sized pieces for easier handling and cooking. Set aside separately until needed.

Add just enough water to cover the potatoes and the diced red potatoes into a large stew pot. Add a dash or two of salt. Bring to a boil. Cover with lid and cook until the potatoes are tender.

Into a separate large saucepan or skillet over a medium heat, you will add the chopped bacon pieces, diced green bell pepper, chopped onion, and minced garlic cloves. Stir constantly while cooking until the onions are transparent. Saute until the green bell pepper and bacon piece are tender.

Drain off bacon drippings with the exception of about 1 teaspoon. Stir in the celery seed, salt and pepper. Saute for 1 to 2 minutes. Add this mixture to the pot of boiling potatoes and stir.

Reduce the heat to medium. Add the cubed Velveeta cheese and stir to help melt the cheese. Slowly add the milk, stir continually while heating the soup through until hot.

Hearty and Delicious Sweet and Sour Chicken and Turkey Crock Pot Stew

Sweet and sour sauces come in many varieties. The sweet part can be from sugar, brown sugar, molasses, corn syrup, sweet fruits like pineapple, peaces or apricots, and more. This recipe uses honey. If you wanted to go completely sugar-free you could probably use Stevia. The sour part most often comes as vinegar or lemon juice but there are plenty of other sour fruits that could be used. I chose lemon juice because it seems to do better in my digestive system than vinegar. Feel free to modify this recipe to your own tastes and preferences.

This one turned out great and made two plus meals for the two of us. I served it over rice, but it could be served as it comes out of the crock-pot.

Beef Stew

Ingredients

1 pound ground turkey
1 pound skinless, boneless chicken thigh meat
1/4 cup all purpose flour
1/4 cup olive oil
2 large carrots, cut in 1 inch long pieces
1 large onion, sliced
2 medium potatoes, peeled and cubed
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon paprika
1 tablespoon Worcestershire sauce
1/2 cup lemon juice
1/4 cup honey
1 cup water

Instructions

1 - Mix flour, salt, pepper and paprika together until uniform.
2 - Cut the thigh meat into bite size pieces.
3 - Dredge the ground turkey and the chicken thigh meat in the flour mixture.
4 - Brown the turkey and chicken meat in a skillet (black iron skillet preferred)
5 - Put the carrots and potatoes in the bottom of the crock-pot.
6 - Remove the browned chicken and thigh meat and put into the crock-pot.
Note: Scrape the browned bits off the bottom of the skillet with a spatula.
7 - Combine the lemon juice and water and add to the skillet to deglaze, then add all to the crock-pot.
8 - Add the rest of the ingredients to the crock-pot.
9 - Cook on high for 4 to 5 hours.

Serve over cooked rice.

- 2 c. beer
- 1/4 c. flour

Directions:

- Coat beef cubes with the 1/2 cup flour.
- Brown in melted butter.
- Drain off excess fat. In crock pot, combine browned meat with onion, salt, pepper, garlic and beer.
- Cover and cook on low 5-7 hours (all day) until meat is tender.
- Turn control to high.
- Dissolve remaining 1/4 cup flour in small amount of water.
- Stir into meat mixture, cook on high 30-40 minutes.
- Serve with rice and salad.

3. All Day Macaroni and Cheese

Ingredients:

- 8 ounces elbow macaroni, cooked and drained
- 4 cups (16 ounces) shredded sharp Chedder Cheese
- 1 can (12 ounces) evaporated milk
- 1 1 /2 cups milk
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Directions:

- Place the cooked macaroni in crockpot that has been sprayed with nonstick cooking spray.
- Add the remaining ingredients, all except 1 cup of the cheese, mix well.
- Sprinkle with the remaining 1 cup of cheese and then cover and cook on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges.
- Do not remove the cover or stir until it has finished cooking.

4. Apple Brown Betty

Ingredients:

- 3 lbs. cooking apples
- 10 slices of bread, cubed (about 4 cups)
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. salt
- 3/4 c. brown sugar
- 1/2 c. butter or margarine, melted

Directions:

- Wash apples, peel, core, cut into eighths; place in bottom on crock.
- Combine bread cubes, cinnamon, nutmeg, salt, sugar, butter; toss together.
- Place on top of apples in crock. Cover.
- Place crock into outer shell.
- Cook on low setting 2 to 4 hours.

Makes 6 to 8 servings.

Once the timer is done, release pressure either through automatic release or by running cold water on the lid. Add the rest of the vegetables and drop about 2 tbsp of Worcestershire sauce plus salt and pepper to taste. Cover it with the lid again and cook for around 15 minutes more.

Serve with brown rice or bread.

Grilled Cauliflower - Easy and Delicious

Delicious as a side dish or an appetizer served with a prepared dip, grilled cauliflower is fast and easy to make using just a few ingredients. This dish goes well with chicken, beef, pork and seafood.

1 head fresh cauliflower
3 tbls olive oil or vegetable oil
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1 tsp Italian seasoning or seasoning mix
Preheat grill to 425 degrees.

Wash cauliflower and remove leaves. Cut off about one inch from the stem. With the cauliflower sitting upright and the stem facing downward, cut vertical slices, 1 1/2 inches thick, keeping the florets attached to the stem. In a large zipper bag combine remaining ingredients, and mix thoroughly. Add cauliflower slices being careful not to break them apart. Marinate in the mixture for 10 minutes. Place slices on the hot grill and cook for ten minutes on each side or until tender using tongs to turn. Serves 4 as a side dish or 6 as an appetizer.

Note: If the cauliflower pieces break apart during preparation, they can still be used if they are large enough to place on the grill. Cauliflower can also be roasted in the oven if a grill is not available.

Ingredients: 6" pork back ribs

cut in half

1 Bottle Chicken and rib sauce

1 pkg onion soup mix

1/2 tsp garlic powder

Salt & Pepper

*NOTE* Pork can be substituted with Beef

1. Place the ribs in the slow cooker, cut to fit.
2. Empty 3/4 of bottle of sauce into the slow cooker.
3. Pour contents of soup package on top.
4. Sprinkle garlic powder over ribs.
5. Top with remaining sauce.
6. Add salt and pepper to taste.
*NOTE* Should be cooked from frozen, if not however, alter cooking time to 3-4 hours on low or 1-2 hours on high.

Perfect Sidedish: Roasted garlic potatoes.
Ingredients: 2Pkgs baby potatoes (red and yellow)

3 Tbsp extra virgin olive oil

2 Tsp garlic powder

2 Tsp dehydrated onion

1/2 Tsp dried parsley, (can be substituted for fresh.)

Salt and pepper to taste.

1. Cut baby potatoes in half, and quarter each half.
2. In a glass baking dish, place the potatoes evenly.
3. Pour olive oil over potatoes and proceed with dry ingredients.
4. Mix well ensure all pieces are coated well
5. Bake in a 350*F Oven for 40-50 mins

Delicious Beef Stroganoff Recipe

Stroganoff is a Russian meal containing fried bits of beef and served in sauce with sour cream. There are many kinds of stroganoff recipes. Here are a few ideas to make stroganoff dishes:

#1. Beef Stroganoff with Noodles

Ingredients:
2 tablespoons vegetable oil
1 ½ pounds beef (stew) cut into ½ inch bits
½ pound bacon cut into ¼ inch pieces
½ onion diced
3 strips of celery diced
2 tablespoons seasoning salt
¼ cup Worcestershire sauce
3 (1/4 ounce) tins beef broth
1 (8 ounce) pack dry egg noodles
1 teaspoon butter
2 (4 ounce) cans sliced mushrooms
¼ cup cornstarch
1/3 cup cold water
8 ounces sour cream

Directions:
1. Heat oil on high heat and brown beef stew meat.
2. Remove meat from pan and sauté the bacon, onion and celery in the same pan.
3. Remove when the bacon is fully cooked and the onions look clear.
4. Add the beef to the pan.
5. Stir in beef broth, seasoning salt and Worcestershire sauce and bring to boil.
6. Cover, reduce the heat to average and simmer until the meat is well cooked.
7. Boil water and salt in a big pot.
8. Add the noodles, cook for 8-10 minutes then remove and drain.
9. Liquefy the butter in a skillet over moderate heat and fry mushrooms for 3-4 minutes then add it to the meat.
10. Bring the mixture to a boil.
11. Mix cornstarch and water and stir it in the meat. Stir regularly.
12. Mix in sour cream until smooth and serve over egg noodles.

Ingredients:
2 pounds ground beef
2 onions chopped
1 clove garlic minced
1 (4 ½ ounce) tin mushrooms drained

1 ½ cups water
4 tablespoons all-purpose flour

Directions:
1. Heat a large skillet on average heat
2. Add ground beef, onions, garlic and mushrooms. Sauté until onion is golden brown.
3. Season with salt and black pepper
4. Stir bouillon cubes, tomato paste and hot water into meat mixture.
5. Stir flour and water together then add to mixture.
6. Reduce the heat to low and simmer for 1 hour.

#3. Meatballs Stroganoff

Ingredients:
12-16 ounces frozen meatballs
1 cup beef broth
1 4-ounce can sliced mushrooms, drained
8 ounces dairy sour cream
2 tablespoons all-purpose flour
½ cup milk
1 tablespoon mustard
4 cups hot cooked wide egg noodles

Directions:
1. Combine meatballs, beef broth and mushrooms in a skillet.
2. Bring to a boil and lower heat.
3. Cover and boil for approximately 15 minutes or until meatballs are full heated.
4. Mix flour and sour cream together in a bowl.
5. Add milk and mustard and beat.
6. Add the sour cream mixture to the skillet and stir.
7. Allow to cook until thick and bubbly.
8. Serve over hot cooked noodles.
