Terrific Crock Pot Beef - Never Use Cream of Mushroom Soup in Your Crock Pot Again

If there's one thing that I absolutely detest, it's using cream of anything soup in my crockpot. Like you, I've searched the internet to find new and different crockpot beef recipes. When I find one that looks interesting, I click on it and these are the instructions that I hate to see. "Next add one can of cream of mushroom soup". That's not interesting and it's not good! So I've looked high and low for recipes that don't use canned soup, ever. I've found several that my family and I like. I'm going to share two with you now.

Crock Pot Beef Ragout

Beef Stew

1 1/2 to 2 pounds lean beef stew meat

1 tablespoon oil 1 to 2 medium onions, coarsely chopped

2 to 3 tomatoes, chopped

1 cup baby carrots

3 cloves garlic, minced

2 tablespoons quick-cooking tapioca

1 cup beef broth 1/4 cup dry red wine or beef broth

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon pepper

2 small zucchini, halved and sliced

1/4-inch thick Brown beef in oil in heavy skillet.

Drain and place in crockpot. Mix in onion, tomatoes, carrots, garlic and tapioca. Next, mix remaining ingredients (excluding zucchini) in a bowl and pour into slow cooker. Cook on LOW 8-10 hours. Add zucchini about 45 minutes before serving. Serve over rice or pasta.

Crock Pot Asian Flank Steak

2 pounds flank steak, sliced into 6 thin slices

2 tablespoons oil, to brown flank steak

6 slices pineapple rings in juice, reserve 1/2 cup of juice

2 tablespoons soy sauce

1 teaspoon ginger, grated

1 tablespoon sherry

2 tablespoons brown sugar

1 teaspoon Worcestershire Sauce

kosher salt and freshly ground pepper to taste

Slice flank steak into 6 thin slices. It can help to roll it, tie it and then cut it with a very sharp knife. In a heavy skillet, brown the flank steak in oil until it's brown on all sides. Place steak into slow cooker. Top with pineapple rings. In a mixing bowl, combine the remaining ingredients. Mix well and then pour over flank steak. Cover and cook on LOW for 8-9 hours. You can cook on HIGH for 5-6 hours, but it won't be as tender. I serve this with rice and steamed broccoli. Enjoy!
